Mary's Memo has been around since 1968 when it first appeared in the Bryan Chief. By now I certainly know my readers and their preference for recipes. First of all, in this economy you want reasonably priced ingredients. I hear you loud and clear on that! Also, you want something tasty with a minimum of ingredients and time to make it. So when I perused the pages of 300 Best Casserole Recipes by Tiffany Collins, I looked for a recipe that fit my criteria for Mary's Memo recipes. Tiffany Collins is a nationally recognized culinary professional and spokesperson on food, fitness, entertaining and fitness. She is also Culinary Director of the Texas Beef Council., Think casseroles have gone out of style? Nope! They're more than ever in demand by parents who crave savings in time and money but still want to produce tasty meals., Casseroles are good any time of year, but especially during these cold and seemingly dark days of winter. We go from home to office or school -- or both -- and coming home to a meal brimming with comfort ingredients is exactly what the soul cries out for. "Since 9/11, my personal goal has been to make meal time family time," says Tiffany Collins, author of "300 Best Casserole Recipes" (Robert Rose). Collins, who lives in Austin, Texas, says casseroles came into their own in the 1970s. The dishes were quick and easy "but when I looked back at them when researching this book, they had a stick of butter in them. Today, we use a tablespoon of butter or olive oil. It's very interesting to see how we have progressed in our cooking." "It was fun telling my friends I was writing this cookbook, because everyone has a favorite from childhood -- Goulash, tuna noodle casserole, you name it," she says, adding that in the Dakotas, people call casseroles a "hot dish" and in other parts of the country, they are called "one-dish" meals. The cookbook explores the gamut of casseroles from breakfast to dessert. One of the most interesting desserts is Southern Chocolate Pecan Pie Brownies, a broken frozen pecan pie mixed with chocolate chips, butter and other yummy ingredients. "I came up with the idea after working for Southern Living (magazine) years ago. We were challenged by a vendor who supplied us with frozen pies to see what we could do with them. I thought about adding it to a brownie batter. I played around with it, tweaked it some more and this is what I came up with," Collins says.Collins, who is a nationally certified group fitness instructor, said her book is a combination of casserole recipes with one chapter devoted to "healthy choices." That doesn't mean the others are oozing in fat and calories, only that they are loaded with flavor and, if desired, modifications can be made. For instance, when a recipe calls for a can of evaporated milk, a can of skim evaporated milk can be used just as well. But, as the pecan pie brownie casserole demonstrates, there is room for treats in our lives. "Moderation is the key; I feel so strongly about that," Collins says. "If we starve ourselves, if we don't allow ourselves a splurge, then we will have our (diet) fall.", Think casseroles have gone out of style? Nope! They're more than ever in demand by parents who crave savings in time and money but still want to produce tasty meals. Casseroles are comforting, easy to make, and ideal for households on the go because you can freeze them, and pop them in the oven when you're ready for them. In 300 Best Casserole Recipes, Collins, a nationally certified group fitness instructor and culinary professional, offers nutritious recipes using ingredients most of us already have on hand in our pantries or freezers. She offers a range of dishes from Smoked Gouda Mac and Cheese, Ratatouille Casserole and Black Bean Enchilada Casserole, to Southwestern Shepherd's Pie, Twice-Baked Potato Casserole and Pecan Pie Brownies., Nothing says "comfort food" like a warm, satisfying casserole. There's often a stigma attached to this type of dish -- a suggestion that it doesn't take much skill to put together a casserole, or that it's simply a jumbled-together collection of leftovers -- but Tiffany Collins's new book, 300 Best Casserole Recipes, seeks to prove the naysayers wrong with a compendium of delicious recipes ideal for beginners and advanced cooks alike. Collins explains in the introduction how the casserole's image took a hit in the 1970s when families began turning to canned ingredients over fresh, in an effort to save time and money. A nationally recognized culinary professional, Collins has responded with a cookbook that takes the casserole in a number of interesting and creative directions. This hearty collection includes both classics you probably remember from your childhood, as well as thoroughly modern creations. There are sections brimming with recipes for every occasion, including breakfast, brunch, and dessert, and chapters devoted to appetizers, side dishes, and healthy choices. There's even a Kid's Stuff chapter aimed at pleasing even the most finicky eaters. While more photos would have been nice -- and a Chapter Index is sorely lacking -- overall, 300 Best Casserole Recipes turns out much like the celebrated dish itself: hearty and satisfying., One dish meals may come in a close second to "good night's sleep" and ahead of "so so sex" for most any careworn adult cook. This collection has no glamor -- Velveeta makes more than one appearance -- but the dishes are still contemporary, quick, and tasty. And they run the gamut, Vegan Tamale Pie to Chicken Noodle Pea Casserole, with such dishes as Wine-Soaked Bread Bake, Tater Nugget Bake, Chai Chipotle Cheeseburger Casserole, and Baked Crab with Sherry White Sauce somewhere in between.
