Microplane utilizes a chemical process called photo-etching that defines and sharpens the edge of each tooth on the grater.     Super sharp grater. It is so much higher quality than the competition, which I have owned, there is no comparison. If you are just going to grate soft cheese, any grater will do, but if you would like to have the option of grating veggies, this is your best bet.
